Soft wheat gnocchetti with eggplant caviar, guanciale and sweet pecorino cheese
Crepe with ragu of porcini mushrooms, speck and cow milk ricotta cheese

SECOND COURSE

Umbrian roast suckling pig with rosemary sauce, Potato and leek pie and Tomato gratin with herbs

DESSERT

Melon and yogurt semifreddo
